Alessandra Romulo Squillantini, granddaughter of the late statesman Carlos P. Romulo and her husband Enzo Squillantini graciously shared family recipes that date back several generations at a cooking demonstration at The Maya Kitchen . Let me share the “Ginataang Sigarillas with Tinapa” or winged beans cooked in coconut milk and topped with smoked tinapa. Sounds divine, right. So here it is.
9 grams garlic
15 grams white onion
90 grams smoked tinapa
450 grams sigarillas
3 teaspoons bagoong
9 grams chicken broth cubes
250 ml water
300 ml fresh gata
Sauté garlic, onions and smoked tinapa. Add sigarillas, bagoong, chicken broth and water. Wait until the sigarillas are cooked before adding the fresh gata; simmer for a few minutes. Put on a serving plate and serve.
Servings: Good for 3
