    Chicken Empanada

    empanadaChicken Empanada is a favorite snack and party fare that I can serve hot or cold. I always thought making empanada was difficult but after baking Apple Pie, Empanada is a breeze. Here is an easy empanada recipe that uses baking. The ingredients and procedure includes two parts, the Filling and the pastry shell.

    Ingredients

    1. Filling

    1 medium szied cooked chicken (flaked, cut to small pieces)
    1 smal can green peas
    4 medium sized potatoes, cubed
    1 small can mushrooms, sliced
    1/3 carrots, cubed
    1 can cream of mushrooms or Chicken soup
    1 tablespoon sugar
    salt and pepper to taste
    2 large onions thinly sliced and chopped

    Chicken Cordon Bleu


    I find the Chicken Corden Bleu an attractive party fare. It’s easy to prepare. Usually I prepare the rolling of the chicken breast the night before and then do the dredging procedure on the day of the party. In that way, I am less hassled during party preparation. Enjoy!

    Ingredients

    1/2 kilo chicken breast
    salt and pepper to taste
    4 slices cheddar cheese
    4 slices sweet ham
    1/4 cup all-purpose flour
    2 eggs, slightly beaten
    1/2 cup bread crumbs
    1/4 cup butter

    Chicken Cannelloni

    One of the dishes I prepared for our last Christmas day lunch in our old home in Makati in the year 2005 was Chicken Cannelloni. The young ones particularly raved the rich creamy Chicken Cannelloni. The recipe came from my sister, Lorna who modified it many times. I forgot to take a close-up photo of the Cannelloni dish but it’s the rectangular pyrex on the table. The great thing about Cannelloni is that I can prepare it a day before , freeze it and heat it on Christmas Day itself. It takes the stress away from cooking so many dishes in one day.

    Cannelloni usually refers to rectangular pasta sheets that are rolled with a filling. However, sometimes the pasta dough is replaced with a cooked crepe, generally 3 to 4 inches in length and once rolled, one inch in diameter. After cooking the crepe (or boiling the pasta), it is typically filled with a savory stuffing which may include ricotta cheese, spinach, and various meats. It is then covered with a sauce, typically classic tomato or bechamel sauce, although many variations exist.

    Chicken Relleno (Stuffed Chicken)

    Chicken Relleno or Stuffed Chicken. Relleno comes from the Spanish word “Rellenar” which means “to stuff. The chicken is stuffed with ground pork, ham, vegetables, hard boiled egg, etc. and then baked. Here is a favorite dish which I want to share with you. The hard part is in the deboning but once you’ve mastered it, stuffing the chicken shouldn’t be too hard.

    Poulet a l’Orange, A Chicken Recipe from Culinary Institute of Aristocrat

    Most of the time, I prepare roasted chicken sans garnishing. Roasted chicken doesn’t have to look plain. I discovered this French inspired recipe while attending a one day appreciation course at the Culinary Institute of Aristocrat. Try it out for yourself.

    Ingredients: 4 tbsp orange rind
    Salt and ground black pepper to taste
    1.5 chicken whole
    Salt and ground black pepper to taste
    300 grams fond lie
    50 grams white sugar
    60 ml white wine vinegar
    60 grams butter salted
    45 grams grand marnier
    To taste iodized salt
    To taste ground black pepper

    Garnish
    Orange fruit sliced
    Maraschino red cherries with stem
    Parsley
